A tropical escape to Latin America. Inspired by a beachside bungalow nestled somewhere along the coast, The Diver’s menu features light dishes and bold cocktails. Fresh seafood takes center stage with ceviches, aguachile with Pacific shrimp, and lobster quesadillas, but rest assured there’s something on the menu for every appetite. Guiding the kitchen is longtime friend, mentor and true bohemio ­– Sergio Sanchez. A rolling stone in his own right Sergio proudly calls Chicago home, but after decades of travel his cooking is recognized throughout Mexico having cooked for famous musicians, politicians, family and friends.

Known for his wild imagination and interior design, Adolfo Garcia held nothing back when envisioning The Diver. The interiors combined with a playlist curated by friends in Tulum will bring a fresh ocean breeze to River North. The exterior will be an urban take on the corner beach shack with custom painted murals, wood siding and ample outdoor seating. Combining a relaxed feel with a bit of glam, Garcia was more recently inspired during the last two years spent traveling with his daughters along the Pacific and Caribbean coasts, stopping village by village through Tulum, Sayulita, Puerto Escondido, Nayarit and Baja.

To garnish off the bar program, Adolfo turned to Chicago native Jasmine Diaz. Back from Mexico after several years working at world famous La Rosa Negra in Mexico City and Gitano in Tulum, Jasmine’s deep understanding of the craft coupled with impeccable service will turn this low key bungalow into a River North destination.

Guests may take comfort in knowing that all plates and cutlery are single use and eco-friendly. Made from fallen leaves and water, LeafwareÒ products are all natural, compostable and biodegradable, and contain zero binders or chemicals.
